G is for Gluten Free Cooking!
Several members of our family eat gluten free, and one thing I have learned is that gluten is hidden in many things!
There are a few convenience items that I really like to use in cooking, but have not been able to find gluten free versions in the grocery store. (Or if I can find a GF version, it is so outrageously overpriced that I could never justify buying it!)
After searching and tweaking, I would like to share some recipes that I have been enjoying using in my cooking, and I hope by sharing them here, that they will be a help to someone!
GF Soy Sauce (make this one first, because you will need some for the next recipe!)
2 C. GF beef or vegetable broth
1 TBS. apple cider vinegar
1 1/2 tsp. molasses
1/8 tsp. ground ginger
1/8 tsp. ground black pepper
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. ground red (cayenne) pepper
Mix all ingredients together in a sauce pan. Bring to a boil and allow to continue boiling until the mixture reduces to about 1 cup, or till desired thickness.
Store in refrigerator and shake well before using.
GF Worcestershire Sauce
1/2 c. apple cider vinegar
3 TBS GF soy sauce (see recipe above)
1 TBS water
1 1/2 TBS brown sugar
1/4 tsp. ground ginger
1/4 tsp. dry mustard
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/8 tsp. cinnamon
1/8 tsp. ground black pepper
1/8 tsp. ground red (cayenne) pepper
salt to taste
Mix all ingredients in a sauce pan. Bring to a boil, then allow to simmer until desired thickness is reached, stirring continually. Store in the refrigerator and shake well before using. Recipe will make about 3/4 cup.

OOH, I will have to try these. I love Worcestershire sauce, but I've become so super-sensitive to fish that the teensy bit of anchovy in most of them sets me off.
ReplyDeleteYes, same here.... and the only GF worcestershire I can find for sale in the store has the anchovies in it! I've been very happy with this one...it's easy and tastes great. :-)
